Cereal & Marshmallow Snack

Cereal & Marshmallow Snack

Rice Krispie Treats with a healthy boost from cranberry seeds.

Ingredients

  • 2 tbs butter unsalted
  • 5 oz marshmallows
  • 3 cups puffed rice cereal
  • 1 tbs cranberry seeds

Instructions

  1.  Spray an 8 inch square pan with non stick spray or line with parchment paper and set aside.
  2.  In a nonstick pan, over medium low heat, begin to melt the butter.
  3.  Once the butter is melted, add the marshmallows and continue to stir with a heat-resistant rubber spatula until melted.
  4.  Once melted, remove the pan from the heat and add your cereal and cranberry seeds.
  5.  Stir until everything is evenly combined then press the mixture down into the 8 inch square pan and allow to cool.
  6.  Once cooled, remove the pressed mixture from the pan. Slice into 6 portions, and serve.

Cranberry Granola

Cranberry Granola

Delicious and healthy snack featuring cranberry seeds and dried cranberries.

Ingredients

  • 3 cups old fashioned rolled oats
  • 1/2 cup coconut flakes
  • 1/2 cup Miller Organics Cranberry Seeds
  • 1/2 cup chopped almonds
  • 1/2 cup cashews
  • 1/2 cup sunflower seeds
  • 1/4 tsp cinnamon
  • 1/2 cup dried cranberries
  • 3 tbsp coconut oil melted
  • 2 tbsp orange zest (about one orange)
  • 5 tbsp orange juice
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla

Instructions

  1.  Preheat the oven to 250 degrees F. 
  2.  Combine rolled oats, coconut flakes, sunflower seeds, cranberry seeds, almonds, cashews in a large bowl.
  3.  In a separate bowl, mix together coconut oil, orange zest, orange juice, maple syrup, cinnamon and vanilla.
  4.  Combine both mixtures until all dry ingredients are fully moist.
  5.  Spread mixture onto large cookie sheet and bake for 1 hour 15 minutes or until golden brown, stirring every 15 minutes.
  6.  Remove from oven and transfer to large bowl. Stir in the dried cranberries.

White Chocolate Granola Bites

Delicious dessert with cranberry & peanut.

Ingredients

  • 2 cups rolled oats (quick cooking)
  • 1/4 cup chopped peanuts (roasted, salted or unsalted) 
  • 1/4 cup dried cranberries, chopped
  • 3/4 cup unsweetened creamy peanut butter
  • 2 tbs honey
  • 1 cup white baking chocolate chips
  • 1 tbs cranberry seeds

Instructions

  1.  Combine rolled oats, peanuts, dried cranberries, peanut butter, and honey in a bowl. Mix until combined.
  2. In an 8 x 8 pan lined with parchment, pour in oat mixture and compress into the pan, using another sheet of parchment on top to prevent sticking to your hands while you compress the mixture. Refrigerate for at least one hour.
  3. Set up a double boiler to melt the white chocolate or place chocolate in a microwave safe bowl and microwave for 10-15 second increments, stirring in-between until melted. Stir in cranberry seeds.
  4.  Once fully chilled, cut the bites into 20 pieces, dip each bite into the melted chocolate and let cool on wire rack with wax paper underneath.

Steel Cut Oats with Cranberry Seeds

Add some healthy cranberry seeds to oats for delightful twist on oatmeal.

Ingredients

  • 2 cups water
  • 1/2 cup steel cut oats
  • (to taste) salt, cinnamon & brown sugar
  • 1 tsp cranberry seeds

Instructions

  1.  Add the water to a small pan and bring to a boil.
  2. Add the oats to the boiling water and allow the mixture to return to a boil and then reduce the heat and simmer for 30 minutes or until the oats have a desirable texture.
  3. Remove the oats from the heat and combine with your desired amount of salt, cinnamon and brown sugar.
  4. Stir in the cranberry seeds and serve immediately.

Cranberry Oatmeal Energy Bites

No bake Cranberry Oatmeal Energy Bites are the perfect way to enjoy our seeds. And only 5 ingredients!

Ingredients

  • 1 cup oatmeal
  • 2/3 cup nut butter
  • 1/2 cup coconut
  • 1/2 cup dried cranberries
  • 2 tbs cranberry seeds

Instructions

  1.  In a food processor mix together the oatmeal, nut butter and coconut until you have a nice mixture of a paste but still enough whole oats to be able to tell what it is.
  2.  Remove the food processor blade and mix in the dried cranberry and cranberry seeds by hand.
  3.  Divide the mixture into 12 balls. Use your hand to roll them into smooth balls. you might need to compress the mixture with your hands to get it to stick.
  4.  Put the balls on a plate and put them in the fridge for 30 minutes to allow them to firm up.
  5.  Serve and enjoy!
  6. Store in airtight container in the fridge for up to 5 days.

Cranberry & Apple Crisp

Not only does this taste amazing it will make your home smell absolutely scrumptious.

Ingredients

  • 3 tbs sugar
  • 1 tsp ground cinnamon
  • 3 cups sliced, peeled cooking apples
  • 2 cups cranberries (fresh or frozen)
  • 1/2 cup quick cooking rolled oats
  • 1/4 cup packed brown sugar
  • 2 tbs flour
  • 1/4 tsp ground nutmeg 
  • 3 tbs butter
  • 2 tbs chopped nuts (optional)

Instructions

  1.  In mixing bowl, combine sugar and cinnamon. 
  2.  Place apples and cranberries in an ungreased 1 1/2 quart casserole.
  3. Sprinkle sugar-cinnamon mixture over fruit and toss gently.
  4.  Bake covered @375 degrees for 25 minutes. Remove from oven.
  5.  In a small mixing bowl, combine oats, brown sugar, flour, and nutmeg.
  6.  With a pastry blender, cut in butter till mixture resembles coarse crumbs. 
  7.  Stir in nuts (optional).
  8.  Sprinkle the oat mixture over the top of the partially cooked fruit. 
  9.  Return to oven and bake, uncovered for 15-20 minutes or until fruit is tender and topping is golden brown. Serve warm with ice cream.
